I just felt in the mood, and half an hour later…
…cupcakes, strawberries, and cream. (Click for larger view.)
It all went in like this (after ten minutes of prep* (1/2 cup butter, 1/2 cup sugar, 2 eggs, 1 cup flour, baking powder, spices, lemon peel, and whatever fruit or flavouring you might be putting in, and a little milk for moisture)):
and there’s 20 minutes in the oven at about 375 degrees (during which you can whip the cream and slice the strawberries, or make a frosting out of butter, and/or cream and fruit, etc), and then it comes out like the pictures below show. (By the way, of course you should cream the butter and sugar first before mixing in eggs and then the rest…)
There are any number of variations you can do on this. I made coconut ones a few days ago, for example. Same basic setup, but add grated coconut and some of the water from it….

dang, looks pretty tasty. i’ve never added lemon peel to my cupcakes before…how much did you put in? enough so that a lemon zesty taste is detectable?

Thanks for the credit! Can’t accept it – all credit goes to Mum. Making yet another batch tonight. After the making 36 on Saturday morning I took a break. So Z was shocked last night that there was no cake. The sad resigned look had me rushing to take the butter out of the fridge in order to make a batch later today!!Thanks Mum!
